Why strawberries are different from the rest of the range

Lemons, oranges, limes, grapefruit, apples, pineapple, and mango all have long enough growing and sourcing windows that we can keep a steady supply through most of the year. Strawberries have a shorter, more defined season, and the fruit itself is more delicate going into the dehydrator; overripe or underripe strawberries dry unevenly in a way the hardier fruits in the range don't. We only run strawberry batches when the fruit coming in meets the standard the rest of the range holds to.

What "limited batches" actually means

When we say strawberry slices are seasonal, we mean the ordering page can genuinely go out of stock between batches, not that we're creating artificial scarcity around a product we could easily keep in stock. If you've ordered strawberry slices before and found them unavailable a few months later, that's the actual supply picture, not a marketing tactic.

Why the color and texture are worth the wait

Dried strawberry holds one of the boldest colors in the entire range, a deep ruby that most dried fruit can't match, along with a visible seed pattern that makes each slice distinct. That visual impact comes directly from using properly ripe fruit rather than pushing through whatever's available to keep the shelf stocked.

When to expect availability

Strawberry season timing shifts slightly year to year depending on growing conditions, so we don't publish a fixed calendar date for restocks. The most reliable way to catch a batch is to check the product page directly rather than assuming a specific month, since availability tracks the actual harvest rather than a schedule.
